Which Midday setting are you using? Is it one of the presets found in World>Environment or are you referring to a setting found in the Library?
Can you also confirm which viewer you are using and provide an image of the gray sky you're seeing?

Open GL water shaders have been around for a long time now, even ones as simple as this from 2014: https://vimeo.com/87388042 , though I have no idea how complicated it would be to run in SL.
That being said, It's been 2 decades now and we still don't even have a way to duplicate the water effects we DO have, like put them in the library or something so we can make ponds, elevated water for waterfalls, etc. that actually match the system water. Perhaps something in the inventory library that is the default water "plane/prim" that will change to whatever water you change to in your settings, just as the system water does. How is this not a thing in 2025? Aside from the most basic PBR integration, why do the terrain and water all work/look pretty much how they did in 2004? There is no reason why the water shaders in SL can't be accessible.
SL terrain and water really should be brought up to date. These technologies have been out there for over a decade. This is the kind of thing that would bring new people to SL and retain ones already here.

I had commented on a previous water feedback request, that was closed with a new version of the viewer. In my opinion, this new water is even worse than it was, not better :/ It looks flatter and has even less complicated reflections from what I'm seeing, with the same day and water settings, from what it had before this new update. (Also the lines in water on sim edges are REALLY obvious again. They're always there a bit, but wow are they in your face now.)
I know a huge part of the issue is that reflections can't work the way that they used to- they used to be amazing, but PBR traded the ability to do correct water reflections in preference of semi correct reflections everywhere, but it has made water so sad. And that sadness can't be corrected by reflection probes- you can make it better, but even with a probe it's still not reflecting off water properly. (And, of course, probes are a non option for any open off sim water; it only can possibly work on lakes, ponds, rivers.)
